BBQ Chicken with caramelized onions, pineapple, bacon and pepperoni marinated in a crispy grilled sandwich with lots of melted cheese!
BBQ Chicken pizza is one of my favorites! The combination of chicken in a sweet and spicy BARBECUE sauce with onions, hot peppers, bacon and pineapple is simply divine, especially with melted cheese, so it’s no wonder that it also makes a great grilled cheese! I love to start this grilled cheese by caramelizing the onions, which is time consuming, but it’s worth it! Then BARBECUE sauce, boiled chicken, crispy bacon, sweet and spicy pineapples and hot pickled peppers, all mixed to form the filling. Grilled cheese consists of buttered bread and a lot of cheese( I like a Monterey jack cheese) that is roasted in a pan until the outside is golden brown and crispy and the inside is hot and the cheese has melted!

Ingredient

1 Tablespoon of oil
1 medium onion, sliced
2 Slices of Bacon, cut into 1-inch pieces
1 1/2 Cups Chicken, Boiled and sliced or shredded
1/2 cup pineapple, diced
1/4 cup BARBECUE sauce
1/4 cup pickled hot peppers (Optional)
8 Slices of Bread
2 Cups monterey Jack cheese, crushed

Directorate

Heat the oil in a saucepan over medium heat, add the onion and cook, stirring frequently, for about 30-45 minutes, until they are deeply browned.
In the meantime, cook the bacon until crispy in another pan and put it on paper towels to drain.
Combine onions, bacon, chicken, pineapple, BARBECUE sauce and pickled hot peppers.
Heat a large saucepan over medium heat.
Put butter on one side of each slice of bread, put half of it in the pan with the butter side down, cover with half of the cheese, the BBQ chicken mixture, the remaining cheese and the remaining slices of bread with the butter side up.
Fry until the cheese is browned and melted on both sides, about 2 to 4 minutes per side.
Note: If necessary, grill the grilled cheese in batches.
Tip: I like to cook extra bacon and nibble it while caramelizing the onions!


Option: use a different processed cheese, such as cheddar.
Option: use 2 slices of cheese per sandwich instead of grated cheese.
Option: use pickled jalapenos instead of pickled hot peppers.
Tip: caramelize the onions, cook the chicken and bacon in advance, and the grilled cheese will only take about 15 minutes!
