Whole mushrooms in a creamy Parmesan sauce with spinach and sun-dried tomatoes.
Mushrooms are one of my favorite foods and this recipe is a great way to enjoy them! This dish is so easy to prepare, it uses whole mushrooms, so no slicing, and they are simply cooked quickly before preparing the delicious Sauce! The Sauce is quite simple with a cream base, seasoned with parmesan cheese and sun-dried tomatoes, which are simply full of flavor, not to mention the Italian seasoning! Spinach and fresh persil complete the dish. I like to add a touch of white miso paste for its Umami and salt flavor with a pinch of red pepper flakes for a touch of warmth. These creamy Tuscan mushrooms take very little time to prepare, so they are perfect to accompany just about any meal!

This dish is perfect as a side dish, served over a protein (like chicken) or as a meal!

3 Tablespoons Of Butter
1 Tablespoon Of Oil*
1 small onion, diced
1 1/2 Pounds Of Mushrooms
3 cloves of garlic, chopped
1 pinch of red pepper flakes (optional)
1 cup of heavy cream
1/4 Cup sun-dried tomatoes, thinly sliced

1/4 Cup Parmigiano Reggiano (Parmesan cheese), grated
1 teaspoon of Italian spices
4 cups Of Spinach
salt and pepper to taste
2 tablespoons fresh persil, chopped


Melt the butter and heat the oil in a large frying pan over medium heat.
Add the onions and mushrooms and cook until the onions are tender, about 5 minutes.
Add the garlic and red pepper flakes and cook until tender, about a Minute.
Add the cream, sun-dried tomatoes, Parmesan cheese, Italian seasoning and spinach, bring to a boil and cook until the cheese has melted into the Sauce and the spinach has wilted, about 3 to 5 minutes.

Season with salt and pepper, garnish with Persil and enjoy!
Tip: Use the oil from the jar of sun-dried tomatoes to add even more sun-dried tomato flavor!
Option: replace part of the cream with broth and milk.
Option: Add 1 tablespoon of white miso paste.
